Method
- Step 1: Place whole potatoes in a large pot and cover with salted water; bring to a boil and cook until tender, about 15-20 minutes.
- Step 2: Drain and let potatoes cool slightly; peel and mash until smooth, ensuring no lumps remain.
- Step 3: In a mixing bowl, combine mashed potatoes, egg, salt, and nutmeg; mix well.
- Step 4: Gradually add gluten-free flour, kneading gently until a soft, pliable dough forms.
- Step 5: On a floured surface, divide dough into 4 portions and roll each into a 1/2-inch diameter rope.
- Step 6: Cut ropes into 1-inch pieces and press each with a fork to create ridges.
- Step 7: Bring a large pot of salted water to a boil; cook gnocchi in batches for 2-3 minutes or until they float to the surface.
- Step 8: Remove with a slotted spoon, toss with olive oil to prevent sticking, and serve immediately with your favorite sauce.
Notes
For the best texture, don’t overwork the dough; it should be soft but not sticky.
