Ingredients
  

Main
  • 2 cups masa harina
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/2 cups warm water
  • Oil for cooking

Method
 

  1. In a mixing bowl, combine 2 cups masa harina, 1/2 teaspoon salt, and 1 teaspoon baking powder.
  2. Gradually add 1 1/2 cups warm water, mixing until a dough forms.
  3. Knead the dough for about 2 minutes until smooth and pliable.
  4. Cover the dough with a cloth and let it rest for 10 minutes.
  5. Divide the dough into 8 equal portions, roll into balls and flatten each into a 1/2 inch thick disk.
  6. Heat a skillet or griddle over medium heat for about 2 minutes, then add a little oil.
  7. Cook each gordita for 4 to 5 minutes per side until golden brown.
  8. Wrap cooked gorditas in a cloth to keep warm and serve immediately.

Notes

Don't skip the resting period for best texture. Serve warm and keep wrapped in a cloth.
