  • 1 cup turkey drippings optional

Method
 

  1. Step 1: In a medium saucepan, melt 4 tablespoons unsalted butter over medium heat.
  2. Step 2: Whisk in 1/4 cup all-purpose flour until smooth to form a roux.
  3. Step 3: Cook the roux, stirring constantly, for 2-3 minutes until lightly golden.
  4. Step 4: Gradually pour in 2 cups turkey or chicken stock, whisking constantly to prevent lumps.
  5. Step 5: Add 1 cup turkey drippings if using, stirring to combine for extra flavor.
  6. Step 6: Increase heat to bring the gravy to a gentle simmer and cook for 5 minutes until thickened.
  7. Step 7: Season to taste with salt and black pepper.
  8. Step 8: Remove from heat and serve warm.

Notes

For a super smooth gravy, strain it through a fine mesh sieve before serving.
