  • 1 pound ground lamb
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups spinach chopped
  • Fresh parsley for garnish

Method
 

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced onion and sauté for about 3–4 minutes until translucent and fragrant.
  3. Stir in the minced garlic and cook for 1 minute until aromatic.
  4. Add the ground lamb, breaking it apart with a spatula, and cook for 5–7 minutes until browned.
  5. Sprinkle in the ground cumin, ground coriander, smoked paprika, salt, and pepper; stir to combine and cook for 1 minute.
  6. Fold in the chopped spinach and cook for about 3 minutes until wilted.
  7. Taste the mixture and adjust seasoning if needed.
  8. Transfer to a serving dish, garnish with fresh parsley, and let rest for 5 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat on the stove over medium heat until warmed through.
