Ingredients

  • 4 cups mixed salad greens like romaine and spinach
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup bell pepper diced
  • 1/4 cup shredded carrots
  • 1/4 cup feta cheese optional
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Prepare all the ingredients on a clean surface.
  2. Rinse the greens under cold water and dry them using a salad spinner or paper towels.
  3. Chop the cherry tomatoes, cucumber, red onion, bell pepper, and carrots into desired sizes.
  4. In a large mixing bowl, toss together the salad greens, chopped vegetables, and feta cheese if using.
  5. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  6. Pour the dressing over the salad just before serving.
  7. Use tongs or your hands to toss the salad gently until evenly coated with the dressing.
  8. Transfer the salad to a serving bowl and serve immediately.

Make the dressing in advance and store it separately to save time when you’re ready to serve.
