  • 4 medium potatoes peeled and diced
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt to taste
  • 4 chicken tenders cooked and diced
  • 1 cup corn canned or frozen
  • 1 cup shredded cheese cheddar or a blend
  • 1 cup gravy homemade or store-bought

Method
 

  1. Place the peeled and diced potatoes in a large pot of salted water and bring to a boil over high heat, then reduce to medium and boil for 15 minutes or until tender.
  2. Drain the potatoes and return them to the pot; add butter and milk, then mash with a potato masher or hand mixer until smooth and creamy.
  3. Heat a frying pan over medium-high heat; cook chicken tenders for 4-5 minutes on each side until golden brown and fully cooked, then dice.
  4. In a separate pan, heat the corn over medium heat for 3-4 minutes until warmed through.
  5. Warm the gravy in a small saucepan over medium heat, stirring occasionally, until it reaches a gentle simmer.
  6. Divide the mashed potatoes evenly among 4 large serving bowls as a base.
  7. Top each bowl of mashed potatoes with diced chicken and a generous portion of warm corn.
  8. Sprinkle shredded cheese over each bowl and drizzle with hot gravy; serve immediately.

Notes

For extra flavor, season the mashed potatoes with garlic powder or mix in sour cream before serving.
