- In a mixing bowl, whisk together the flour, salt, sugar, and baking powder to combine the dry ingredients.
- Pour in the olive oil and stir until the mixture resembles coarse crumbs.
- Gradually add the warm water and stir until a rough dough forms.
- Turn the dough onto a floured surface and knead for about 5 minutes until smooth.
- Cover the dough with a kitchen towel and let it rest for 10 minutes.
- Preheat a cast-iron skillet over medium-high heat for 5 minutes until hot.
- Divide the dough into 8 equal pieces and roll each piece into a thin circle about 1/8 inch thick.
- Place one dough circle in the hot skillet and cook for 2 minutes on the first side until it puffs and lightly browns, then flip and cook for another 2 minutes.
- Remove the lavash from the skillet and keep warm under a towel while cooking the remaining pieces.
Notes
Keep the dough covered to prevent drying. Store cooled lavash in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in a skillet over low heat.
