  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Grease a 9x13 inch baking dish with cooking spray or butter.
  3. In a mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, whisk together the milk, eggs, and melted butter.
  5. Pour the wet mixture into the dry ingredients and gently stir until just combined, lumps are okay.
  6. Fold in black beans, corn, half of the shredded cheese, and diced jalapeños if using.
  7. Spread the batter evenly into the prepared baking dish.
  8. Bake for 25-30 minutes or until golden brown.
  9. Let cool for a few minutes before slicing and serving.
