  • 1 box 6 oz Stove Top stuffing mix
  • 1 cup beef broth
  • 1 large onion finely chopped
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup ketchup plus extra for topping
  • 1 tablespoon dried parsley

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the Stove Top stuffing mix and beef broth and let sit for 5 minutes to absorb the liquid.
  3. Add ground beef, chopped onion, eggs, salt, black pepper, Worcestershire sauce, 1/2 cup ketchup, and dried parsley, and mix gently until just combined.
  4. Transfer the meat mixture to a loaf pan and shape into a loaf.
  5. Spread a thin layer of ketchup over the top of the meatloaf.
  6. Place the loaf pan on a baking sheet and bake for 1 hour or until the internal temperature reaches 160°F (70°C).
  7. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
  8. Slice the meatloaf and serve hot with your favorite sides.
