Ingredients

  • 2 cups leftover cooked meatloaf sliced
  • 4 slices bread your choice
  • 1/2 cup ketchup or BBQ sauce
  • 1/4 cup shredded cheese optional
  • 1 cup lettuce or spinach
  • 1 large tomato sliced
  • Salt and pepper to taste

Method
 

  1. Preheat the skillet or griddle over medium heat.
  2. Slice the leftover meatloaf into thick pieces.
  3. Add meatloaf slices to the skillet and cook for 3-4 minutes on each side until hot and slightly crispy.
  4. Toast the bread slices in the skillet for about 2 minutes per side.
  5. Spread ketchup or BBQ sauce generously on one side of each toasted bread slice.
  6. Layer the heated meatloaf slices onto the sauce-coated bread.
  7. Add fresh lettuce and tomato slices on top of the meatloaf.
  8. Sprinkle shredded cheese if desired.
  9. Cap the sandwich with the other slice of bread, sauce side down.
  10. Slice the sandwich in half if desired and serve immediately.

Notes

Layer the sandwich with grilled onions for extra flavor. Use thick slices of meatloaf for better texture. Don’t skip toasting for crunch. Experiment with sauces and bread types. Add slices of avocado for creaminess.
