  • 1 cup whipped topping like Cool Whip
  • 1 can 20 ounces crushed pineapple, drained
  • 1/2 cup chopped pecans
  • 1/2 cup maraschino cherries halved

Method
 

  1. Place the pie crust in a 9-inch pie pan; thaw if using a frozen crust according to package instructions.
  2. In a mixing bowl, combine the softened cream cheese and powdered sugar. Beat with an electric mixer until smooth, about 1-2 minutes.
  3. Gently fold in the whipped topping until fully incorporated, taking about 1 minute.
  4. Stir in the drained crushed pineapple carefully to maintain fluffiness, about 1 minute.
  5. Add chopped pecans and stir to combine, about 30 seconds.
  6. Pour the filling into the prepared pie crust and spread evenly using a spatula.
  7. Cover with plastic wrap and refrigerate for at least 2 hours to set.
  8. Before serving, garnish with halved maraschino cherries on top.

Notes

Ensure the cream cheese is thoroughly softened before mixing. Drain pineapple well to avoid a runny pie. For extra flavor, add other fruits like strawberries or coconut.
