- Preheat the oven to 425°F (220°C).
- Wash and peel the potatoes, then cut them into even fry shapes.
- In a mixing bowl, toss the potato fries with olive oil, paprika, garlic powder, cumin, salt, and pepper until evenly coated.
- Arrange the seasoned fries in a single layer on a baking sheet to prevent steaming.
- Bake the fries in the preheated oven for 25 to 30 minutes, flipping halfway through, until golden and crispy.
- Remove the fries from the oven and sprinkle with shredded cheddar cheese and diced jalapeños. Return to the oven for 5 minutes to melt the cheese.
- Once the cheese is melted, remove the fries from the oven and let them cool slightly.
- Drizzle the fries with sour cream and guacamole, then serve immediately.
Notes
For extra crispiness, soak the fries in water for 30 minutes before baking, then pat dry.
