Method
- Wash the new potatoes thoroughly under cold running water to remove any dirt.
- Cut larger potatoes in half to ensure even cooking.
- Place the potatoes in a large pot, cover with water by at least 1 inch, and add a pinch of salt.
- Bring to a boil over high heat, then reduce to a simmer and cook for about 15 to 20 minutes until tender.
- Drain the potatoes in a colander and let them steam dry for 1 to 2 minutes.
- Return the pot to low heat and melt the butter gently, taking care not to brown it.
- Add the drained potatoes back to the pot, season with salt, pepper, and lemon juice, and toss to coat.
- Sprinkle chopped parsley over the potatoes, toss gently, and serve warm.
Notes
For an extra kick, add a pinch of crushed red pepper flakes for a hint of heat.
