- Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes to ensure even cooking.
- Generously season both sides of the steaks with salt and black pepper.
- Heat a heavy skillet over medium-high heat and add 2 tablespoons of olive oil, heating until hot but not smoking.
- Place the steaks in the hot skillet and sear for 3-4 minutes without moving to develop a crust.
- Flip the steaks with tongs for flipping and add the smashed garlic cloves and thyme sprigs to the pan to infuse flavor.
- Continue cooking for another 3-4 minutes, or until a meat thermometer inserted into the thickest part reads 130°F for medium-rare.
- Remove the steaks from the pan and let them rest on a cutting board for 5-10 minutes to allow the juices to redistribute.
- Slice the steaks against the grain with a sharp knife for slicing and serve immediately.
