Ingredients
  

Main
  • 2 cups Northern beans dried
  • 6 cups water
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 bay leaf

Method
 

  1. Rinse the dried Northern beans under cold water thoroughly to remove any dirt or impurities.
  2. Optional: Soak the beans overnight in water to soften them and reduce cooking time.
  3. In a large pot or Dutch oven, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  5. Add the rinsed beans, water, bay leaf, salt, pepper, and smoked paprika to the pot and stir to combine.
  6. Increase the heat to high and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, stirring occasionally.
  8. Check if the beans are tender; if not, continue simmering until they reach the desired softness, then adjust seasoning before serving.

Notes

Leftovers can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
