Method
- Rinse the dried Northern beans under cold water thoroughly to remove any dirt or impurities.
- Optional: Soak the beans overnight in water to soften them and reduce cooking time.
- In a large pot or Dutch oven, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Add the rinsed beans, water, bay leaf, salt, pepper, and smoked paprika to the pot and stir to combine.
- Increase the heat to high and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, stirring occasionally.
- Check if the beans are tender; if not, continue simmering until they reach the desired softness, then adjust seasoning before serving.

Leftovers can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
