- Step 1: Peel and dice the potatoes, chop the onion, and mince the garlic to prepare your ingredients.
- Step 2: In a large pot over medium heat (about 175°C), heat 1 tablespoon oil and sauté the onion for 3 minutes until softened.
- Step 3: Add the minced garlic and cook for 1 minute until fragrant.

- Step 7: Use a potato masher or immersion blender to mash or blend the soup until you reach your desired consistency.
- Step 8: Stir in the heavy cream, salt, black pepper, and paprika, and cook over low heat for 2 more minutes.
- Step 9: Serve the soup in bowls and garnish each with shredded cheddar cheese, crumbled bacon, and sliced green onions.
Notes
For richer flavor, use homemade chicken stock; substitute Yukon Gold potatoes for a buttery texture or half-and-half for a lighter soup.
