  • 1 pound boneless skinless chicken thighs
  • 1 tablespoon vegetable oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds for garnish optional
  • Green onions for garnish optional

Method
 

  1. Cut the chicken thighs into bite-sized pieces.
  2. In a bowl, combine chicken, minced garlic, minced ginger, soy sauce, and brown sugar; marinate for 10 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat.
  4. Add marinated chicken to the skillet, cook without overcrowding for 5-7 minutes until browned and cooked through.
  5. In a small bowl, whisk together rice vinegar, cornstarch, and water.
  6. Pour the sauce mixture over the chicken, stir and simmer for 2-3 minutes until sauce thickens.
  7. Remove from heat; garnish with sesame seeds and sliced green onions.
  8. Serve the teriyaki chicken over rice or with vegetables.

Notes

Marinating the chicken for longer will intensify the flavor, so consider doing it overnight!
