- Preheat the oven to 325°F (160°C).
- Season the pork shanks with salt and freshly ground pepper.
- Heat olive oil in a large roasting pan over medium-high heat and sear the pork shanks for 5-7 minutes on each side until golden brown.
- Remove the shanks and add the chopped onion and minced garlic to the pan; sauté for 3 minutes until fragrant.
- Pour in the chicken broth and red wine, scraping up any browned bits from the bottom of the pan.
- Return the pork shanks to the pan, ensuring they are partially submerged in the liquid.
- Stir in the fresh rosemary, fresh thyme, and tomato paste over the shanks.
- Cover the pan tightly with aluminum foil and roast in the oven for 2.5 to 3 hours, until the meat is fork-tender.
- Let the pork shanks rest for 10-15 minutes before serving.
