  • 2 large potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • 8 taco shells
  • Shredded cheese
  • Lettuce
  • Diced tomatoes
  • Salsa
  • Avocado

Method
 

  1. Peel and cut the potatoes into even cubes.
  2. Place the cubed potatoes in a pot of salted water and bring to a boil over medium-high heat; cook until tender, about 10 minutes.
  3. Drain the potatoes and transfer them to a mixing bowl; mash until smooth.
  4. Stir in the olive oil and taco seasoning into the mashed potatoes.
  5. Season the potato mixture with salt and pepper to taste.
  6. Heat a large skillet over medium heat and crisp the taco shells for 2-3 minutes, turning occasionally.
  7. Fill each taco shell generously with the potato mixture.
  8. Top each filled taco with shredded cheese, lettuce, diced tomatoes, salsa, and avocado.
  9. Serve immediately while the shells are hot and crunchy.
