  • 3 cups rolled oats
  • 1 cup mixed nuts almonds, walnuts, pecans
  • 1 cup protein powder your choice
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup dried fruits raisins, cranberries, or apricots

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine 3 cups rolled oats, 1 cup mixed nuts, and 1 cup protein powder; stir to distribute evenly.
  4. Add 1/2 cup honey or maple syrup, 1/4 cup melted coconut oil, 1 teaspoon vanilla extract, and 1/2 teaspoon salt; mix until all dry ingredients are coated.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake in the preheated oven at 350°F (175°C) for 20 to 25 minutes, stirring halfway through for even browning.
  7. Remove from the oven and let cool slightly; stir in 1/2 cup dried fruits while still warm.
  8. Allow the granola to cool completely on the baking sheet before transferring to an airtight container.

Notes

Let granola set before storing in an airtight container for maximum crunch; keeps fresh for up to two weeks.
