Ingredients

  • 8 ounces protein pasta of your choice
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 medium onion chopped
  • 1 cup cherry tomatoes halved
  • 1 cup spinach leaves
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

  • Skillet
  • Wooden spoon or spatula

Method
 

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the protein pasta and cook according to package instructions until al dente, about 8 to 10 minutes.
  3. Drain the pasta in a colander and rinse briefly with cold water to stop the cooking process.
  4. Heat olive oil in a skillet over medium heat.
  5. Add minced garlic and chopped onion to the skillet and sauté until fragrant and translucent, about 2 to 3 minutes.
  6. Stir in the halved cherry tomatoes and cook until they soften and release their juices, about 3 to 4 minutes.
  7. Add spinach leaves and cook until wilted, about 1 to 2 minutes.
  8. Gently fold the cooked pasta into the skillet with the vegetables, then season with dried basil, salt, and pepper; toss to combine and heat through for about 2 minutes.
  9. Serve immediately, topping each portion with grated Parmesan cheese if desired.

Notes

Always taste and adjust seasoning before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
