Ingredients
  

Main
  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon oil for dough
  • Water as needed
  • Oil for deep frying

  • Deep frying pan or kadai
  • Slotted spoon
  • Paper towels

Method
 

  1. In a large mixing bowl, combine 2 cups whole wheat flour and 1/2 teaspoon salt.
  2. Mix in 1 teaspoon oil and coat the flour evenly.
  3. Gradually add water in small increments, kneading until the dough is soft but not sticky.
  4. Cover the dough with a damp cloth and let it rest for 15 minutes.
  5. Heat enough oil in a deep frying pan over medium heat (around 350°F) until hot.
  6. Divide the dough into small balls and roll each into a 4-inch thin circle.
  7. Carefully slide each puri into the hot oil and fry until golden brown on both sides, about 30 seconds per side.
  8. Remove the puris with a slotted spoon and drain on paper towels. Serve hot.

Notes

Make sure the oil is hot enough to ensure the puris puff up beautifully.
