- Roll out the pie crust to fit a 9-inch pie dish, leaving a slight overhang for crimping.
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the raisins, sugar, cornstarch, cinnamon, nutmeg, lemon juice, and salt; stir until well mixed.
- Dot the mixture with butter.
- Pour the raisin filling into the prepared pie crust and spread evenly.
- Cover with top crust or create a lattice, then cut slits for steam to escape.
- Beat the egg and brush it over the crust for a golden finish.
- Bake for 40 minutes or until the crust is golden brown; then let cool for at least 30 minutes before slicing.
