  • 2 cups raisins
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 egg for egg wash

Method
 

  1. Roll out the pie crust to fit a 9-inch pie dish, leaving a slight overhang for crimping.
  2. Preheat the oven to 375°F (190°C).
  3. In a mixing bowl, combine the raisins, sugar, cornstarch, cinnamon, nutmeg, lemon juice, and salt; stir until well mixed.
  4. Dot the mixture with butter.
  5. Pour the raisin filling into the prepared pie crust and spread evenly.
  6. Cover with top crust or create a lattice, then cut slits for steam to escape.
  7. Beat the egg and brush it over the crust for a golden finish.
  8. Bake for 40 minutes or until the crust is golden brown; then let cool for at least 30 minutes before slicing.

Let the pie cool for at least 30 minutes before slicing to allow the filling to set properly.
