  • 1 lb chicken livers cleaned and trimmed
  • 12 oz bacon cut in half
  • 1/4 cup soy sauce
  • 1 tbsp brown sugar
  • 1/2 tsp ground ginger
  • 1/2 tsp garlic powder

Method
 

  1. Start by cleaning and trimming the chicken livers to remove excess fat and sinew.
  2. In a mixing bowl, whisk together soy sauce, brown sugar, ground ginger, and garlic powder to create the marinade.
  3. Add the chicken livers to the marinade and let them soak for at least 10 minutes to enhance flavor absorption.
  4. Preheat the oven to 400°F (200°C).
  5. Wrap each marinated liver with a half slice of bacon and secure with a toothpick or skewer.
  6. Line a baking sheet with aluminum foil for easy cleanup.
  7. Arrange the bacon-wrapped livers on the prepared baking sheet in a single layer.
  8. Bake for approximately 20 minutes until the bacon is crispy and the livers are cooked through.
  9. Optionally, broil for the last 1-2 minutes to increase crispiness.
  10. Remove from oven and let cool slightly before serving warm.

Notes

For extra crispness, broil the Rumaki for the last minute of baking. Soak toothpicks in water if grilling to prevent burning.
