  • 6 samosas store-bought or homemade
  • 1 cup chickpeas cooked or canned
  • 1 small red onion finely chopped
  • 1 medium tomato diced
  • 1/4 cup cilantro chopped
  • 1 teaspoon chaat masala
  • 1/4 cup tamarind chutney
  • 1/2 cup plain yogurt
  • 2 tablespoons green chutney
  • 1/2 cup sev for garnish

  • Medium-sized mixing bowl
  • Small saucepan

Method
 

  1. Preheat oven to 350°F (175°C). Bake the samosas on a baking sheet for 10 minutes until crispy and golden.
  2. Rinse and drain the chickpeas under cold water and pat dry.
  3. In a mixing bowl, combine the chopped red onion, diced tomato, and chopped cilantro.
  4. Add the chickpeas and chaat masala to the vegetable mix and toss gently to coat.
  5. Cut the baked samosas into quarters and arrange them on a serving plate.
  6. Layer the chickpea mixture evenly over the broken samosas.
  7. Drizzle tamarind chutney, green chutney, and spoon dollops of plain yogurt on top.
  8. Finish by sprinkling sev and extra cilantro. Serve immediately to maintain crispness.
