- Cube bread into bite-sized pieces.
- Melt butter in a skillet over medium heat, then add chopped onion and celery and sauté until soft, about 5 minutes.
- Add dried thyme, dried sage, salt, and black pepper to the skillet and stir to combine.
- Add mixed seafood to the skillet and cook until opaque, about 3-4 minutes.
- In a large mixing bowl, combine the sautéed vegetable and seafood mixture with the cubed bread and mix gently.
- Pour in seafood stock and beaten eggs, stirring until the bread is evenly moistened.
- Grease a baking dish and transfer the mixture into it.
- Bake in a preheated oven at 350°F (175°C) for 30 minutes until the top is golden and crispy. For extra crunch, broil for 2-3 minutes, watching closely to avoid burning.
