  • 4 cups cubed bread
  • 1/2 cup unsalted butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound mixed seafood shrimp, crab, and scallops
  • 2 cups seafood stock
  • 2 large eggs beaten
  • 1/4 cup fresh parsley chopped

Method
 

  1. Cube bread into bite-sized pieces.
  2. Melt butter in a skillet over medium heat, then add chopped onion and celery and sauté until soft, about 5 minutes.
  3. Add dried thyme, dried sage, salt, and black pepper to the skillet and stir to combine.
  4. Add mixed seafood to the skillet and cook until opaque, about 3-4 minutes.
  5. In a large mixing bowl, combine the sautéed vegetable and seafood mixture with the cubed bread and mix gently.
  6. Pour in seafood stock and beaten eggs, stirring until the bread is evenly moistened.
  7. Grease a baking dish and transfer the mixture into it.
  8. Bake in a preheated oven at 350°F (175°C) for 30 minutes until the top is golden and crispy. For extra crunch, broil for 2-3 minutes, watching closely to avoid burning.
