- In a large pot over medium heat, add 2 tablespoons olive oil and heat until shimmering, about 2 minutes.
- Add diced onion, bell pepper, and celery and sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add sliced smoked sausage and cook until browned, about 5 minutes.
- Add long-grain rice and stir to coat with oil and vegetables for about 1 minute.
- Pour in diced tomatoes with their juices and chicken broth; stir to combine.
- Stir in Cajun seasoning and dried thyme.
- Bring mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender.
- Stir in shrimp, cover, and cook until shrimp turn pink and opaque, about 3 to 4 minutes.
Notes
Let the jambalaya rest for a few minutes before serving to allow flavors to meld. Garnish with fresh parsley if desired.
