Ingredients

  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon red pepper flakes
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh basil chopped
  • Salt and pepper to taste
  • 1/2 cup white wine or chicken broth optional

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the red pepper flakes and cook for 30 seconds to bloom.
  4. Add the shrimp and cook for 3-4 minutes until pink and opaque.
  5. Add the halved cherry tomatoes and cook for 2-3 minutes until they begin to burst.
  6. Pour in the white wine or chicken broth, if using, and simmer for 1-2 minutes to deepen the flavor.
  7. Season with salt and pepper to taste.
  8. Remove from heat and stir in the chopped fresh basil before serving.
