Main
  • 3-4 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 onion sliced
  • 4 cloves garlic minced
  • 4 carrots chopped
  • 4 potatoes chopped
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat and sear the chuck roast on all sides until browned, about 4-5 minutes per side.
  2. Chop the onion, carrots, and potatoes into bite-sized pieces.
  3. Place the chopped vegetables at the bottom of the slow cooker.
  4. Place the seared chuck roast on top of the vegetables in the slow cooker.
  5. In a bowl, combine the beef broth, Worcestershire sauce, minced garlic, dried thyme, salt, and pepper.
  6. Pour the broth mixture over the roast and vegetables, ensuring everything is covered with liquid.
  7. Cover and cook on low for 8 hours in the slow cooker.
  8. Once cooking is complete, shred the roast with two forks in the slow cooker and let rest for 15 minutes before serving.

Notes

For an even richer flavor, let the roast rest for 15 minutes after cooking before serving.
