Method
 

  1. Gather and slice all ingredients to ensure an organized cooking process.
  2. Preheat your grill or smoker to medium heat (about 350°F).
  3. Add 1 tablespoon olive oil to a grill-safe skillet or pan and heat over medium heat.
  4. Toss in chopped bell pepper and sliced onion; sauté for about 5 minutes until softened.
  5. Stir in minced garlic and cook for an additional 1 minute until fragrant.
  6. Add sliced smoked sausage to the pan and cook for 10 to 12 minutes, turning occasionally, until browned.
  7. Season with smoked paprika, cayenne pepper (if using), salt, and pepper; stir to combine flavors.
  8. Remove from heat, garnish with fresh parsley, and serve warm with rice, salad, or crusty bread.
