Ingredients

  • 1 pound ground beef or turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 8 soft taco tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream or yogurt
  • 1/4 cup fresh cilantro for garnish

Method
 

  1. Chop lettuce, tomatoes, and cilantro; shred cheese and set aside.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat (about 350°F) until shimmering, about 1 minute.
  3. Add 1 pound ground beef or turkey to the skillet and cook over medium heat, breaking it up, until browned and fully cooked, about 5-7 minutes.
  4. Sprinkle 1 packet taco seasoning over the meat, add 1/4 cup water, stir to combine, and simmer until sauce is reduced, about 2-3 minutes.
  5. Wrap 8 soft taco tortillas in foil and warm in a 350°F oven for 5 minutes or microwave for 30 seconds.
  6. Place a warm tortilla on a plate and spoon about 1/4 cup of seasoned meat onto the center.
  7. Top each taco with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and a sprinkle of cilantro.
  8. Arrange tacos on a serving platter and serve immediately while warm.

Notes

Keep tortillas warm in a towel while assembling and serve fresh for best flavor.
