Method
- Rinse dried beans under cold water to remove any debris, then soak them in water overnight.
- Heat olive oil in a large pot over medium heat.
- Add chopped onion to the pot and sauté for about 5 minutes, until soft and translucent.
- Stir in minced garlic and cook for about 1 minute, until fragrant.
- Add soaked and drained beans, chicken or vegetable broth, smoked paprika, cumin, salt, black pepper, and bay leaf to the pot; stir to combine.
- Increase heat to high and bring the mixture to a boil.
- Reduce heat to low, cover the pot, and simmer for 1 hour, stirring occasionally, until beans are tender.
- Remove the bay leaf, taste and adjust seasoning as needed, then serve hot.
Notes
For creamier beans, mash a portion with a spoon before serving.
