Main
  • 1 pound of dried beans pinto or navy
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 bay leaf

Method
 

  1. Rinse dried beans under cold water to remove any debris, then soak them in water overnight.
  2. Heat olive oil in a large pot over medium heat.
  3. Add chopped onion to the pot and sauté for about 5 minutes, until soft and translucent.
  4. Stir in minced garlic and cook for about 1 minute, until fragrant.
  5. Add soaked and drained beans, chicken or vegetable broth, smoked paprika, cumin, salt, black pepper, and bay leaf to the pot; stir to combine.
  6. Increase heat to high and bring the mixture to a boil.
  7. Reduce heat to low, cover the pot, and simmer for 1 hour, stirring occasionally, until beans are tender.
  8. Remove the bay leaf, taste and adjust seasoning as needed, then serve hot.

Notes

For creamier beans, mash a portion with a spoon before serving.
