Ingredients

  • 1 cup sourdough starter
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup warm water
  • 1/4 cup baking soda
  • 1 large egg beaten
  • Coarse sea salt for topping

Method
 

  1. In a large mixing bowl, combine the sourdough starter, warm water, sugar, and salt. Mix until combined, then gradually add the flour, stirring until a soft dough forms.
  2. Turn the dough onto a floured surface and knead for about 5 minutes until it becomes smooth and elastic.
  3. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
  4. Preheat the oven to 425°F (220°C).
  5. Punch down the risen dough and divide into 24 equal pieces. Roll each piece into a small ball.
  6. Bring a pot of water to a boil and add the baking soda.
  7. Drop the dough balls into boiling water, cooking for about 30 seconds each to form the classic pretzel crust.
  8. Using a slotted spoon, remove the pretzels and place them on a parchment-lined baking sheet.
  9. Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
  10. Bake in the preheated oven for 12 to 15 minutes, or until golden brown.

Notes

Don't skip the boiling step, as it creates the characteristic pretzel crust. Adjust baking time for preferred crispiness.
