  • 1 lb steak cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 1 cup diced tomatoes canned or fresh
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup green beans trimmed and chopped
  • 1 cup potatoes diced
  • 2 tbsp parsley chopped (for garnish)

Method
 

  1. Heat 1 tbsp olive oil in a large pot over medium-high heat. Add 1 lb steak pieces and sear until browned, about 5 minutes.
  2. Add 1 medium diced onion, 2 chopped carrots, and 2 chopped celery stalks. Sauté until vegetables soften, about 5 minutes.
  3. Stir in 2 cloves minced garlic and cook until fragrant, about 1 minute.
  4. Pour in 4 cups beef broth and stir to combine.
  5. Add 1 cup diced tomatoes, 1 tsp dried thyme, salt, and pepper. Stir well to incorporate.
  6. Bring the soup to a boil, then reduce heat and simmer for 30 minutes.
  7. Add 1 cup green beans and 1 cup diced potatoes. Cook until tender, about 10-15 minutes.
  8. Taste and adjust seasoning as needed. Serve hot garnished with 2 tbsp chopped parsley.

Notes

For even deeper flavor, use homemade beef broth if available.
