Method
- Hull and rinse 2 pounds of fresh strawberries (or thawed frozen strawberries) under cool water and pat dry.
- Cut larger strawberries into halves or quarters to ensure even blending.
- Place prepared strawberries in a blender or food processor.
- Add 1 to 2 tablespoons of honey or sugar and 1 tablespoon of fresh lemon juice if desired.
- Blend on high speed for 30 to 60 seconds until completely smooth.
- Strain the puree through a fine mesh strainer or chinois over a bowl, pressing gently for 5 to 10 minutes to remove seeds.
- Transfer the strained puree into glass jars or freezer-safe containers and refrigerate for up to 5 days or freeze for up to 3 months.
Notes
Puree can be frozen in ice cube trays for easy portioning and used in smoothies, desserts, sauces, or cocktails.
