- In a mixing bowl, combine 2 cups cooked, shredded chicken with 1 tablespoon taco seasoning, coating the chicken evenly.
- Heat a skillet over medium heat and add 1 tablespoon vegetable oil, allowing the pan to get hot.
- Place a flour tortilla in the skillet and spread half with 1 cup shredded cheddar cheese and 1 cup shredded Monterey Jack cheese, then top with seasoned chicken.
