A homemade version of Taco Bell's famous chicken quesadilla with seasoned shredded chicken, melted cheddar and Monterey Jack cheeses, and crispy flour tortillas.

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 tablespoon taco seasoning
  • 2 tablespoons vegetable oil
  • salsa for serving
  • sour cream for serving

Method
 

  1. In a mixing bowl, combine 2 cups cooked, shredded chicken with 1 tablespoon taco seasoning, coating the chicken evenly.
  2. Heat a skillet over medium heat and add 1 tablespoon vegetable oil, allowing the pan to get hot.
  3. Place a flour tortilla in the skillet and spread half with 1 cup shredded cheddar cheese and 1 cup shredded Monterey Jack cheese, then top with seasoned chicken.
  4. Fold the tortilla in half and cook for 3–4 minutes on each side until golden brown and crispy.
  5. Remove the cooked quesadilla and keep it warm while repeating the process with remaining tortillas and filling.
  6. Transfer each cooked quesadilla to a cutting board and slice into wedges with a sharp knife or pizza cutter.
  7. Serve wedges hot topped with salsa and sour cream for dipping.
  8. Enjoy your crispy, cheesy chicken quesadillas immediately for the best texture and flavor.

Notes

For extra flavor, sprinkle garlic powder on the chicken before mixing with taco seasoning.
