  • 8 oz. rice noodles
  • 2 tbsp. vegetable oil
  • 1 onion sliced
  • 2 garlic cloves minced
  • 1 bell pepper sliced
  • 1 cup broccoli florets
  • 2 tbsp. soy sauce
  • 1 tbsp. fish sauce
  • 1 tbsp. brown sugar
  • 1/2 tsp. red pepper flakes
  • 2 green onions sliced for garnish
  • Chopped peanuts for topping optional

  • Large pot for boiling noodles
  • Wok or large skillet for stir-frying

Method
 

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the rice noodles to the boiling water and cook for 3-5 minutes, or until tender but firm.
  3. Drain the noodles and rinse under cold running water to stop the cooking process and prevent sticking.
  4. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  5. Add the sliced onion and minced garlic to the hot oil and sauté for 1-2 minutes, until fragrant.
  6. Add the bell pepper and broccoli florets and stir-fry for 3-5 minutes, until vegetables are just tender.
  7. Add the drained noodles, soy sauce, fish sauce, brown sugar, and red pepper flakes to the skillet and toss to combine.
  8. Cook for an additional 2-3 minutes, allowing the noodles to absorb the sauce and flavors.
  9. Garnish with sliced green onions and chopped peanuts, then serve immediately.
