- In a large pot, heat a drizzle of oil over medium heat. Add the ground beef and cook for 6-8 minutes until browned, breaking it apart as it cooks.
- Add the diced onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for 1 minute to release fragrance.
- Sprinkle in chili powder, cumin, and smoked paprika. Stir well to coat the meat and onions, allowing spices to bloom for 1-2 minutes.
- Pour in crushed tomatoes and stir to combine.
- Gently fold in the kidney beans and black beans.
- Bring the mixture to a simmer, then reduce heat to low and cook uncovered for 30-40 minutes, stirring occasionally.
- Taste and season with salt and pepper as needed.
- Serve hot in bowls, garnished with your favorite toppings such as sour cream, shredded cheese, or diced green onions.
Notes
Letting the chili sit for a day deepens flavors. Serve with cornbread or tortilla chips for a complete meal.
