Ingredients

  • 1 lb ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Optional toppings: sour cream shredded cheese, diced green onions

Method
 

  1. In a large pot, heat a drizzle of oil over medium heat. Add the ground beef and cook for 6-8 minutes until browned, breaking it apart as it cooks.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute to release fragrance.
  4. Sprinkle in chili powder, cumin, and smoked paprika. Stir well to coat the meat and onions, allowing spices to bloom for 1-2 minutes.
  5. Pour in crushed tomatoes and stir to combine.
  6. Gently fold in the kidney beans and black beans.
  7. Bring the mixture to a simmer, then reduce heat to low and cook uncovered for 30-40 minutes, stirring occasionally.
  8. Taste and season with salt and pepper as needed.
  9. Serve hot in bowls, garnished with your favorite toppings such as sour cream, shredded cheese, or diced green onions.

Notes

Letting the chili sit for a day deepens flavors. Serve with cornbread or tortilla chips for a complete meal.
