Method
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, combine 1 ¾ cups all-purpose flour, 2 cups granulated sugar, ¾ cup unsweetened cocoa powder, 1 ½ teaspoons baking powder, 1 ½ teaspoons baking soda, and 1 teaspoon salt.
- Add 2 large eggs, 1 cup whole milk, ½ cup vegetable oil, and 2 teaspoons vanilla extract to the dry mixture and mix to combine.
- Using an electric mixer or whisk, beat the batter on medium speed for about 2 minutes until smooth.
- Carefully stir in 1 cup boiling water until well combined.
- Evenly pour the batter into the prepared cake pans and bake for 30–35 minutes at 350°F (175°C), or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a cooling rack to cool completely before frosting or serving.
Notes
Always measure your flour correctly; too much flour can lead to a dry cake.
