- Bring a large pot of salted water to a boil over high heat and cook the pasta until al dente, about 8-10 minutes.
- In a separate pan, heat the olive oil over medium heat and add the diced onion; sauté until translucent, about 5 minutes.
- Add the minced garlic to the pan and sauté for about 1 minute, stirring constantly to prevent burning.
- Pour in the heavy cream and bring to a gentle simmer; cook for 2-3 minutes until slightly thickened.
- Stir in the grated Parmesan cheese and continue cooking for another 2 minutes, until the cheese is fully melted and the sauce is smooth.
- Add the drained pasta to the sauce and toss to coat each piece evenly.
- Stir in the spinach and halved cherry tomatoes and cook for an additional 2 minutes until the spinach wilts.
- Season with salt and black pepper to taste. Serve hot and enjoy.
Notes
Reserve a little pasta water before draining; adding it to the sauce can adjust the consistency perfectly.
