Ingredients
  

Main
  • 8 ounces of pasta
  • 2 tablespoons of olive oil
  • 1 medium onion diced
  • 3 cloves of garlic minced
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of spinach
  • 1 cup of cherry tomatoes halved

  • Wooden spoon
  • Measuring cups and spoons
  • Colander

Method
 

  1. Bring a large pot of salted water to a boil over high heat and cook the pasta until al dente, about 8-10 minutes.
  2. In a separate pan, heat the olive oil over medium heat and add the diced onion; sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the pan and sauté for about 1 minute, stirring constantly to prevent burning.
  4. Pour in the heavy cream and bring to a gentle simmer; cook for 2-3 minutes until slightly thickened.
  5. Stir in the grated Parmesan cheese and continue cooking for another 2 minutes, until the cheese is fully melted and the sauce is smooth.
  6. Add the drained pasta to the sauce and toss to coat each piece evenly.
  7. Stir in the spinach and halved cherry tomatoes and cook for an additional 2 minutes until the spinach wilts.
  8. Season with salt and black pepper to taste. Serve hot and enjoy.

Notes

Reserve a little pasta water before draining; adding it to the sauce can adjust the consistency perfectly.
