- Begin by washing the green chilies and peeling the garlic cloves.
- Heat the oil in a skillet over medium heat.
- Add the mustard seeds to the hot oil and let them splutter.
- Add the garlic cloves and green chilies to the skillet and sauté until the garlic is golden.
- Remove the skillet from heat and let the mixture cool slightly.
- Transfer the cooled garlic and chili mixture to a mortar and pestle or blender and blend into a coarse paste.
- Season the paste with salt to taste and adjust the heat by adding more chilies if desired.
- Transfer the Thecha to a serving bowl and garnish with fresh coriander leaves if using.

Don’t skip tempering the mustard seeds; it really elevates the flavor profile.
