Method
 

  1. In a mixing bowl, whisk together soy sauce, olive oil, red wine vinegar, and brown sugar until the sugar dissolves.
  2. Stir in minced garlic, onion powder, black pepper, smoked paprika, and dried oregano to form a smooth marinade.
  3. Place the tri-tip in a resealable plastic bag or shallow dish and pour the marinade over the meat, ensuring it is fully coated.
  4. Seal the bag or cover the dish and refrigerate for at least 2 hours, or up to overnight for maximum flavor.
  5. Preheat the grill or oven to medium-high heat (around 400°F if using an oven).
  6. Remove the tri-tip from the marinade, letting excess drip off to prevent flare-ups.
  7. Grill the tri-tip for 30-40 minutes, flipping halfway through, until the internal temperature reaches 130°F for medium-rare.
  8. Remove the meat from heat and let it rest for 10 minutes before slicing against the grain for tender slices.
