- In a large pot, bring 4 cups vegetable or chicken broth to a gentle simmer over medium heat.
- In a small bowl, whisk 1 tablespoon miso paste with a ladle of hot broth until smooth.
- Stir in 1 tablespoon soy sauce and 1 teaspoon grated fresh ginger into the broth.
- Add 2 packs udon noodles to the simmering broth and cook for 3–4 minutes until tender.
- Add 1 cup chopped bok choy and 1 cup sliced mushrooms and cook for 2–3 minutes until vegetables are just tender.
- Season the soup with salt and pepper to taste.
- Remove from heat and stir in 2 tablespoons sesame oil.
- Ladle the soup into bowls and garnish with 1/2 cup chopped scallions before serving hot.
