  • 4 slices of bread thick-cut works best
  • 1 cup almond milk or any plant-based milk
  • 2 tablespoons ground flaxseed acts as an egg substitute
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon maple syrup optional, for sweetness
  • Pinch of salt
  • Oil or vegan butter for frying

Method
 

  1. Combine 2 tablespoons ground flaxseed with 3 tablespoons water in a small bowl and let sit for 5 minutes until thickened.
  2. Whisk together 1 cup almond milk, the thickened flaxseed mixture, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, 1 tablespoon maple syrup, and a pinch of salt in a mixing bowl until smooth.
  3. Preheat a non-stick skillet or griddle over medium heat (about 350°F) for a golden crust.
  4. Dip each bread slice into the batter, soaking for a few seconds on each side.
  5. Add oil or vegan butter to the skillet and cook the soaked bread slices for 3–4 minutes per side until golden brown.
  6. Keep cooked slices warm in a preheated oven at 200°F while you cook the remaining slices.
  7. Stack the French toast on plates, drizzle with maple syrup, and top with fresh fruit, nuts, or powdered sugar.
  8. Serve immediately and enjoy your Vegan French Toast warm.

Pro Tip: Let the bread soak longer for an even softer texture; staler bread absorbs the batter better.
