  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sage
  • 1/2 teaspoon thyme
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon water optional, for moisture

Method
 

  1. Gather all ingredients on the counter to streamline the preparation process.
  2. In a small bowl, combine salt, black pepper, sage, thyme, crushed red pepper flakes, brown sugar, garlic powder, and onion powder until evenly mixed.
  3. Place ground venison in a large mixing bowl and sprinkle the spice blend over the meat.
  4. If the meat is very lean, add 1 tablespoon of water to help retain moisture.
  5. Use your hands or a fork to mix the spices into the meat until just combined; avoid overmixing to keep the sausage tender.
  6. Shape the seasoned meat into 8 evenly sized patties or use a sausage stuffer to form links.
  7. Heat a skillet over medium heat for 1–2 minutes until hot.
  8. Cook the sausage patties or links for 4–5 minutes on each side, or until they reach an internal temperature of 160°F.
  9. Remove from heat and let rest for 2 minutes before serving hot with eggs, pancakes, or your favorite sides.

Notes

Store cooked sausages in an airtight container in the refrigerator for up to three days or freeze raw patties for up to three months. Reheat in a skillet or microwave before serving.
