  • 8 ounces elbow macaroni
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs optional, for topping

Method
 

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the elbow macaroni and cook until al dente according to package instructions, about 8 to 10 minutes.
  3. Drain the pasta in a colander and set aside.
  4. In a large saucepan, melt the butter over medium heat, then whisk in the flour and cook for 2 minutes to form a roux.
  5. Slowly pour in the milk while whisking constantly to avoid lumps, then continue cooking until the sauce thickens and bubbles, about 5 minutes.
  6. Remove the saucepan from heat and stir in the cheddar and mozzarella cheeses until melted and smooth.
  7. Fold the cooked pasta into the cheese sauce until well combined.
  8. If desired, transfer the mac and cheese to a baking dish, sprinkle with breadcrumbs, and broil on high for 2 to 3 minutes until golden and crispy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat gently with a splash of milk to restore creaminess.
