  • 4 cups frozen corn
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Method
 

  1. Measure 4 cups of frozen corn and have all other ingredients measured and ready.
  2. Heat a medium saucepan over medium heat and add the frozen corn; sauté for about 5 minutes until warmed through.
  3. Pour in 1/2 cup heavy cream and stir gently to combine, creating a creamy base.
  4. Add 1/4 cup grated Parmesan cheese and stir until the cheese is fully melted and incorporated.
  5. Stir in 1/4 cup mayonnaise until evenly mixed for a tangy, creamy finish.
  6. Sprinkle in 1 teaspoon garlic powder and 1 teaspoon chili powder, then season with salt and pepper to taste.
  7. Reduce heat to medium-low and simmer the mixture for 5 to 10 minutes, stirring occasionally, until flavors meld.
  8. Transfer the corn to a serving bowl and garnish with fresh cilantro before serving.

Notes

For an extra kick, add diced jalapeños before serving.
