- Remove the husks and silk from the corn to expose the kernels.
- Place the ears of corn directly on the grill and cook for 10-15 minutes, turning occasionally until tender and charred.
- In a mixing bowl, whisk together mayonnaise, sour cream, chili powder, garlic powder, salt, and black pepper to make the dressing.
- Brush the warm, grilled corn evenly with the creamy dressing using a brush.
- Sprinkle crumbled Cotija cheese generously over the coated corn.
- Top each ear with chopped cilantro and arrange on a serving platter.
- Serve immediately with lime wedges on the side and enjoy.
Notes
For extra flavor, grill the corn with the husks on for a few minutes before removing them to finish charring on the grill.
