Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x5-inch loaf pan with butter or cooking spray.
  3. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  4. Add the melted butter to the mashed bananas and mix well.
  5. Stir in the beaten egg and vanilla extract until combined.
  6. In another bowl, whisk together sugar, baking soda, and salt.
  7. Add the dry ingredients to the banana mixture and stir gently until just combined, being careful not to overmix.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake at 350°F (175°C) for 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use overripe bananas as they contain more natural sugar and moisture.
