Ingredients

  • 3 pounds beef chuck or lamb
  • 4 cups beef broth
  • 3 bay leaves
  • 4-5 dried guajillo chilies
  • 2-3 dried ancho chilies
  • 1 onion quartered
  • 5 cloves garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh cilantro for serving
  • Chopped onions for serving
  • Warm tortillas for serving

Method
 

  1. Remove stems and seeds from the guajillo and ancho chilies to prevent bitterness.
  2. Soak the chilies in hot water for 15 minutes until softened.
  3. In a blender, combine softened chilies, onion, garlic, cumin, oregano, and 1 cup of beef broth; blend until smooth.
  4. Heat 2 tablespoons of oil in a large pot over medium-high heat and sear the beef on all sides until browned, about 5 minutes per side.
  5. Pour remaining 3 cups of beef broth and the blended chili sauce over the seared meat.
  6. Add bay leaves to the pot and stir to combine.
  7. Cover and simmer on low heat for 3 hours, stirring occasionally.
  8. Remove the meat from the pot and shred with two forks; discard bay leaves.
  9. Return shredded meat to the consommé, stir to heat through, and ladle into bowls.
  10. Garnish with fresh cilantro, chopped onions, and serve with warm tortillas; add a splash of vinegar or lime juice if desired.

Notes

For an extra kick, add a splash of vinegar or lime juice to brighten the flavors before serving.
